PUMPKIN BREAD

3-1/2 CUPS FLOUR
2 TSP. SODA
1/2 TSP. SALT
1/2 TSP. CLOVES
1/2 TSP. NUTMEG
1 TSP. CINNAMON
3 CUPS SUGAR
4 EGGS
1/3 CUP WATER
2 CUPS CANNED PUMPKIN
CUP CHOPPED NUTS
1 CUP SALAD OIL
1 CUP RAISINS OR CHOPPED DATES

Combine flour, soda, salt, cloves, nutmeg and cinnamon; set aside.
Blend sugar, eggs, water, oil , and pumpkin until smooth.
Add nuts and raisins.
Add flour mixture and blend until smooth.

Grease and flour 2 large loaf pans or 3 1-lb. coffee cans.
Fill coffee cans slightly over 1/2 full.
Coffee can method will make bread much more moist.
Bake at 350-degrees for 1 hour 10 minutes.
Cool 10 minutes, then remove from pans.

Note: 1 large can (29 oz.) of pumpkin equals 3 cups of pumpkin and makes 1-1/2 batches.
The yield is 4 medium loaves.
