HIGH-PROTEIN CREPES

3 EGGS
6 TBSP. FLOUR
1/2 CUP MILK
2 TBSP. MARGARINE, SOFTENED
1/4 TSP. SALT

FOR DESSERT CREPES ADD:
1/2 TSP. VANILLA

Blend all ingredients until smooth. Spray small skillet with non-stick spray.
Pour about 3 Tbsp. batter in center of pan and rotate pan so batter covers
bottom of pan. Cook until top becomes dry looking , then turn to other side to
cook, only until lightly browned.

Dessert crepes can be filled with strawberries or other fruit or ice cream.
